Juliet’s Skinny Bitch Chocolate Chip Cookies

Juliet: “They aren’t healthy if you eat like 6 a day Kate…”
 
My extremely fit sister Juliet has been hoarding this recipe for her delicious and healthy chocolate chip cookies for some time now.  She appears to take after my great grandmother who was a legendary baker and infamous recipe hoarder. She famously knowingly gave out fake versions of her sugar cookie recipe so that no one would make them as well as her. Three weeks of me calling and lobbying Juliet for them has finally paid off!
 
There are so many aspects about these cookies that makes them tops-
One, they are healthy- gluten-free, vegan(ish), and paleo
Two, they are extremely easy to make
Three, they take literally 10 minutes to bake
Four, they are great for freezing and later baking to order
(which in my case has been every night)


ingredients 


I challenge you to not eat the bowl of raw dough while whipping these bad boys up…
 
Preheat oven to 350 degrees
 


In a medium bowl add:
2 1/2 cups almond flour
1/2 teaspoon baking soda
½ teaspoon baking powder
1/2 tsp salt
3/4 - 1 cup chocolate chips (lilly’s chocolate are a nice choice)
3/4 cup chopped walnuts (optional)
 
Blend dry ingredients together with rubber spatula
 


In a separate bowl add:
1/2-1/3 cup honey (sweetness factor)
1/2- 1/3 cup coconut oil (chewiness factor, melt coconut oil in microwave for 30 seconds so that it is easy to blend)
1 tsp vanilla extract
1 egg (can be substituted with flax to make recipe strict vegan)
 
Blend wet ingredients together until combined 
Once combined, add dry ingredients to wet ingredients, blend until mixed 
Use a tablespoon to doll out desired number of cookies. Freeze unused dough. 
Bake for 10 minutes
 
After removing cookies from oven, let cookies sit for an additional ten minutes to cool slightly, then Enjoy!
 


Fun easy additions:
    o   1 cup of rolled oats for grains and textures
    o   ¼ cup of seeds in addition to nuts
    o   ½ cup of dried coconut shavings
